According to Birds of Michigan by Ted Black & Gregory Kennedy, the green patch occurs during breeding plumage, so we don't always see it. A friend took a series of photos in the 80's showing a Great Blue Heron eating a HUGE fish--it balanced it on its chest, then centered it, finally swallowed it whole (took a while), then had to walk away because it was too heavy to fly!
